I was feeding my rabbits oxbow hay this morning when I stumbled across what appears
to be cow dung or manure of some sort in their batch

I was hoping someone could shed some light on this matter! Is this something I should be
worried about as far as E. coli and salmonella and similar things of that nature?

Maybe someone here who owns a farm could shed some light on this situation and tell me
if this anything I should be worried about or not worried about!?

I don’t think there would be terribly much to be concerned about. It looks very dry, which means most things that could cause issues likely aren’t an issue. Herbivore poop is as a rule much safer than carnivore/omnivore poop simply due to the nature of what is eaten. I would certainly contact oxbow and let them know, they might even send you a replacement bag. If you’re really worried, stop using the bag, but I would probably just remove the poop and the handful of hay that surrounded it and keep using the bag. The fields they grow on are full of dried cow and sheep poop after all
