I’ve had a rather small lone water bottle for Willow and Julius to share for awhile now, and they drink it empty so fast it’s hard to keep up. I bought a second water bottle that’s much bigger and have them sitting side by side, but neither bunny will touch the new one! It has the exact same water-dispensing-thing.

How do I get them to try it without risking extreme thirst (aka taking the old one away)?

Who knows. I used to put two bowls out and kept them side by side but the buns only drank from the one on the right. The left one got ignored! Even if one bun was using one, the other would wait for that rather than drink out of the bad bowl lol.

Will either of them use the new one when the old one runs out of water, or do they just ignore it completely? Check and make sure the new one is dispensing properly and that the ball isn’t stuck. I give Luna a water bowl and a water bottle so that she always has a back up water source, and also because she likes using both.

If they’re side by side, chances are they’re only ever going to use the one that is their favourite. Try perhaps putting them at different ends of the cage, so that when they get thirsty, they go to the one that they’re closer too. I have two water bowls in my cage, but they’re not side by side, they’re on different levels. The buns use both

Also depending on the bottle, it may be more difficult to get water from the bottle. Perhaps they’ve tried and they don’t like the size of the tube or weight of the ball. Some water bottles have 2-ball rigs to prevent leaks, but makes it more difficult for rabbits.

Many rabbits prefer bowls to bottles. They can access the water better with a bowl. You will need to have a heavy crockery bowl, so that it can’t be tipped over.
