I have had my bun for almost a year and she’s a bit over a year old. She has been acting a bit strange lately. But, it goes back and forth one day she seems like she isn’t interested in doing anything and the next day she seems happy and is running around. She is eating like normal but she has been “chewing” when she doesn’t have anything in her mouth and that makes me worried she is showing signs of discomfort. I have read many posts on the internet that make me over react but if someone has any info or tips it would be greatly appreciated!!

I would get her checked out by a rabbit savvy vet. Rabbits are so good at hiding things, so if you’re noticing something is not quite right, it is worthwhile having a health check. I always try have the vet check my rabbits teeth even if they are at the vet for another reason. They are notorious for getting dental issues and that can lead to gut issues. She might have molar spurs starting and is feeling it with her tongue. Or something else happening with the oral tissues.
Or it could be unrelated to mouth by the chewing action a coping mechanism for discomfort elsewhere.

Is she moulting at the moment? Moulting can have them a bit out of character also.
