So I’ve noticed that Moxie doesn’t really eat too much hay, she would rather eat pellets and treats. (she likes some veggies and fruits).

So, my question is this: How can I encourage her to eat more Hay?

She’s fed pellets once a day normally with unlimited hay and water.

I’m really tired and I’ll add stuff when I remember it.

          You can try hay toppers.
You can feed her smaller wads of hay over the day (if you’re not away all day), because newly served hay is always tastier even if it’s from the same bag as the “old” hay.
Try different types of hay – meadow, orchard, timothy or mixes.
Cut back on pellets a bit so bunbun gets hungry and HAS to eat hay.

Some bunnies are just extremely picky about hay. Try different types, brands, cuts, and see if you can find one she likes. Basically what Bam said.

Merlin wasn’t eating much hay either. I read that some rabbits are quite fussy with hay, but instead of rushing out and buying a different type, I started hand feeding him some every now and again to see if he actually liked the hay I already had. Turns out he does like it but he much prefers his pellets! So I reduced the amount of pellets he was getting and his hay intake increased. He will still go for pellets over hay any day, but when he runs out of pellets he loves his hay!

Try feeding different types of hay. My bunnies really like oat hay.
They also prefer fresh hay, so I give them small amounts several times a day.
                Cut down on the pellets.
Sometimes I “forget” to feed them their morning veggies and they eat loads of hay instead.
