Ruby doesn't spend too much time in her litter box and has never nibbled on any litter or blanket that was put in the box before. Lately she's been peeing outside of her box as soon as the "yesterdays news" litter that I am currently using has ANY pee soaked into it.
I just bought the litter screens to put on top, and am hoping that will help. I'm just wondering, it's much cheaper but would like to know first if it would be SAFE for her if I replaced the paper litter with a chamois underneath the screen? I don't like putting just newsprint because that she will eat (and she will eat a lot!) and the blankets just aren't soaking up enough.

The Aspen pellets are not so good for bunnies who already spend time nibbling - I used to use them and Ruby would spend more time eating that than eating her hay. Not so nutritious. When they spend a lot of time eating it and it wicks a lot, it's better to avoid it as it won't be good for their stomachs (I consulted my vet on this when she recommended trying the Yesterday's News).
Sir Thumpsey - I didn't buy the Sham Wow brand, I bought them from a seller on Ebay. I got the regular kitchen ones, not the heavy duty. I had to change her litter almost every day, not because it was full but because of the smell, and with the chamois I can leave them 3 days. It cost me $35 to buy $30 of them where the Sham Wow that I had found would have cost the same for half. She also seems to have no problem with the screen. I washed all of the shammys once before using any just to be safe but she doesn't seem to be at all interested in eating it or even nibbling.
