I *believe* the difference between young plants like baby romaine, baby spinach, and young hays, is that they don’t contain as much lignin as adult plants. Lignin is one of the major components in plants that makes them stand up. Less lignin also means less fiber, but I’ve been told in the long run, there’s not too much of a difference. I know that this is true for hay, but just assuming it is for other plants.

Baby lettuces are fine! That’s what is in pretty much every salad mix you would buy prepackaged.

Olivia is such a little fuss-pot! When I give her regular Romaine she will carefully eat all the green leaf around the spine part and discard the spine by the door. It’s quite funny to watch her, she does it so methodically. That’s probably why she liked baby romaine so much. All the good part.

Chacha LOVES the spine of the lettuce! Her Mister John sees her eating it and says “She loves the same part that I do!”
