        What are your favorite things to put in YOUR BIG SALAD?  And your favorite salad dressing.

          My rabbits love the ‘cottontail wilderness salad’: dandelions, lilac leaves and an assortment of grasses and pine twigs…
          I like mixed greens with walnuts and clear vinaigrette

            The most amazing salad I had this summer was bibb lettuce, fresh mint, cantaloupe, gooseberries, fennel root, and feta cheese in an olive oil dressing. I know it sounds weird but it was wonderful, and I recreated it at home several times (I actually found gooseberries at the farmer’s market.) I think pomegranate seeds could be used instead.

            Mr. Bun-Bun and I have some of the same favorite vegetables so it really works out. He LOVES fennel fronds, and I love the root, and I just discovered I can buy them at the Mexican market for $1.50 (which lasts days) – hurray! We also both love swiss chard and cilantro. The only difference is that Bun-Bun can’t have olive oil and balsamic dressing on his like I do… and he can’t have onion and garlic in his, which is my favorite (why can’t bunnies eat those again? I forgot.)

              Some of my salad ingredients:

              Greens – spring mix, baby greens, or spinach leaves
              A protein of some sort – chicken, beef, bacon, fish, or whatever is on hand
              Cheese – fresh mozzarella or goat cheese
              Sliced tomatoes
              Shaved or slivered almonds
              Steamed broccoli florets
              Steamed, soy beans
              Shaved carrot
              An herb, if I have some on hand – usually basil or cilantro
              Homemade balsamic vinaigrette – olive oil, balsamic vinegar, stone ground mustard, fresh garlic, honey, salt & pepper

              I like a lot of stuff in my salads…

              The bunbuns eat a salad of cilantro, bok choy, and a small carrot to share.

                I’m a little low on funds right now, otherwise I would pick up some Italian Parsley as well.. Chacha won’t eat Parsley, but WILL eat Italian Parsley. Lil picky girl

                  Mmmmmm

                  I like salads with eggs in them! Ohhh Trader Joes sells this really really good pear vinaigrette dressing and that on the baby greens ….Mmmm nomnomnom

                  The buns get romaine,green or red leaf lettuce with parsley and cilantro and a carrot!

                     George would not have been happy with me either..I have big salads!  

                    My salad: 

                    • Spinach instead of lettuce
                    • cucumber
                    • celery
                    • green pepper & yellow pepper
                    • radishes
                    • tomatoes
                    • broccoli
                    • carrots
                    • cabbage shreds
                    • walnuts
                    • sesame seeds
                    • occasionally include in a boiled egg
                    • I’ll add turkey or chicken to make it a full meal-meal
                    • Dressing:  Oil & Vinegar or French. I LOVE Ranch, but my favorite kinds are terribly fattening, and I hate the low-fat ranch taste, so I will have ranch on special occasions. 

                    Bunny Salad. 

                    • Lettuces – romaine, curly, red, endive  (lettuces may not be full of nutrition, but still help with hydration)
                    • Dill
                    • Mint
                    • Arugula
                    • Basil
                    • Oregano
                    • Cilantro
                    • Celery (cut in 1/2″pieces) – another low nutrition, but high hydration
                    • Parsley    (higher in calcium, but a duiretic which helps with flushing the system)
                    • Dandelion  (higher in calcium, but a duiretic which helps with flushing the system)
                    • Wheat Grass
                    • matchstick Carrots

                        We’re bursting alright…but I don’t know if it’s all vitamins.   I love veggies, but I love bad stuff too! Those salads though really keep my energy up which I do need since I am going going going all the time.

                          My bunnies are currently getting this salad:

                          -1/3 romaine lettuce
                          -1/3 cilantro
                          -1/3 kale (leaves and stems)

                          Mr. Bunny’s favorite greens are radish leaves, green leaf and romaine lettuce, and kale.

                          Here’s my favorite salad:

                          -Romaine/iceberg lettuce
                          -Mint/lemon balm
                          -Walnuts/pecans
                          -Craisins
                          -Raspberry vinaigrette
